While not as rare as the pre-1859 issues, the $5 Liberty Proofs of 1859-1907 still make a tremendous collection that has rarely been completed. The classic issue of 1875 is the #1 rarity of the set, or, as some argue, maybe it isn't, and we need to look more closely at the 1860 or 1861 as the ultimate coins.
